1. Allow 20–30 minutes to settle after moving it to a new room or into a fridge.
2. Keep it out of direct sunlight and away from cookers, heaters and windows.

4. For food probes: insert into the thickest part, away from bone and fat.

Check the operating range in the specifications above — some models are built for cold storage and some are not. Tell us the temperature you need to hold and we'll confirm the right model before you order.

Common targets: poultry 74°C, minced meat 71°C, whole cuts of beef, pork and lamb 63°C with a short rest, and fish 63°C. Insert the probe into the thickest part, away from bone and fat, and take the reading once it stabilises.

Units are factory-calibrated and hold accuracy well in normal use. For a quick check, place two units side by side for 30 minutes — readings should agree closely. If you work to a standard requiring certified calibration, tell us before ordering and we'll advise which models suit.
